Wild West Honey is a small-scale hobby on our 65 acre full bush property that backs onto 70,000 acres of the Julimar Forest.

My honey is exactly as the bees intended: raw and untreated. I don’t believe in high-heat pasteurization or fine-pressure filtering.

By keeping things simple and small-scale, I ensure that all the "good stuff"—the natural enzymes, local pollens, and medicinal properties—stays right there in the jar.

One of the most beautiful things about the Julimar Forest is its unpredictability. Unlike supermarket honey that always tastes the same, my honey follows the natural rhythm of the Western Australian wilderness.

Some of our most iconic trees, like the Jarrah and Red Gum, are patient—they may only flower once every few years when the conditions are exactly right. This means every harvest is a limited edition. When a particular bloom happens, I capture that moment in a small, seasonal batch. From the deep, medicinal soul of those rare Jarrah flows to the delicate sweetness of White Gum, Powderbark, and Blackbutt, each jar is a snapshot of a specific time and place.
